laura bush's texas buttermilk coconut pie
I've had this recipe for many years. I haven't made it yet. But it sounded interesting. So I've kept the recipe all these years, so I could make it sometime when I have all the ingredients on hand.

Ingredients
- 1 (9-inch) - pie shell, unbaked
- 1/4 cup butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup buttermilk
- 1 cup sweetened shredded coconut, divided
- 1 tablespoon butter
- 2 cups whipped cream

Step 1Preheat oven to 350°F.

Step 2Mix together the melted butter, sugar, eggs, vanilla, buttermilk and 1/2 cup shredded coconut . Pour into pie shell.

Step 3Bake at 350° for 40 to 45 minutes or until set.. Let cool.

Step 4Melt 1 Tbsp butter in a skillet. Add remaining 1/2 cup of coconut, and toast over low heat until lightly golden.

Step 5Garnish pie with the whipped cream. (For a lovely presentation, place whipped cream in pastry bag fitted with a star tip, and pipe the whipped cream on the pie surface.)

Step 6Sprinkle the toasted coconut over the whipped cream. Chill until ready to serve.
