This recipe is one my Great Grandma made for family reunions and we have all come to love it. I use graham cracker crust, but GGMa pressed crumbs into the pan.

Ingredients For icebox cake

  • 1 c
    pineapple juice
  • 1/2 c
    apricot nectar
  • 36-40
    marshmallows
  • 1 c
    whipping cream, whipped
  • 1
    graham cracker pie crust
  • pinch
    graham crackers, crushed

How To Make icebox cake

  • 1
    Over medium heat, melt together(Do NOT Boil)marshmallows with pineapple juice and apricot nectar.

    Cool mixture COMPLETELY.

    Fold whipped cream into cooled mixture.
  • 4
    Pour into crust, top with crushed graham crackers and chill for at least 2 hours.
