This pie is the perfect balance of sweet and sour. It was a favorite recipe of my mother's as it used some of our over abundance of rhubarb.

Ingredients

chopped rhubarb
1
frozen 9-inch deep dish pie crust
1 1/2 c
sugar
3 Tbsp
flour
1/2 tsp
freshly grated nutmeg
3 large
eggs
2 Tbsp
butter, melted

How to Make Gram's Rhubarb Pie

Step-by-Step

  • 1Heat oven to 450 degrees F.
  • 2Place chopped rhubarb in frozen pie crust, spread evenly on bottom. Set aside.
  • 3In a large bowl, combine the sugar, flour and nutmeg.
  • 4Add the eggs and melted butter. Mix well.
  • 5Pour egg mixture evenly over rhubarb. (Mixture will be thick.)
  • 6Bake at 450 degrees F. for 10 minutes. Reduce heat to 350 degrees F. and bake 30-35 minutes longer
  • 7Remove from oven and cool. Store leftovers in refrigerator.
