This is one of two Graham Cracker Pie recipes found in a 1967 edition of "Our Favorite Desserts" from the "Favorites From Home Economics Teacher" cookbook series. This recipe was submitted by Homoiselle House from Hempstead High School of Hempstead, Texas. I am posting these in response to a request, but I have not made either of them.

Makes a 9" pie, serves 6 to 8
Ingredients
- 3/4 cup brown sugar
- 1/2 cup sugar, white, granulated
- 1 tablespoon all purpose flour
- 1 cup milk
- 3 - egg yolks, reserve whites
- 3 tablespoons butter
- 1 cup graham crackers, crushed
- 1 teaspoon vanilla
- MERINGUE
- 3 - egg whites
- 6 tablespoons sugar

Step 1In a saucepan combine both sugars, flour and milk. Add slightly beaten egg yolks to mixture in saucepan. Place saucepan over heat and bring to boil. Add butter and cracker crumbs.

Step 2Cook mixture until thick, remove from heat, add vanilla. Pour thickened mixture into a 9-inch prebaked pie shell.

Step 3MERINGUE: Beat egg whites until stiff, add sugar 2 Tablespoons at a time, continuing to beat until sugar has been incorporated and you can no longer feel sugar grains when you rub a small bit of meringue between your finger and thumb. Top pie filling with meringue. Bake meringue in 350° oven until lightly browned.
