I do not know how many of you have heard of "Furs Cafeteria" not sure of spelling.I know people in Oklahoma know it. They always had the most delicious home cooked meals, buffet style: meatloaf, steak, chops, ham, chicken, turkey, bbq, fish, any meat, all the sides, potatoes, gravy & veggies, salad bar to die for, homemade rolls, beans, cornbread. Dont even ask about desserts. But, now that I have mentioned desserts, this was their signature pie. This is the closest recipe I have found to the original. If anyone has an original recipe, I beg , pass it on.
Cream together powdered sugar and butter with mixer. Add eggs, salt and vanilla. Beat till light and fluffy. Spread mixture evenly into selected pie crust and then chill while preparing filling.
FILLING: Whip cream till stiff, fold in powdered sugar, fold in nuts and pineapple. Spread this mixture over top of chilled base mixture and chill thoroughly. Top with cream and cherries. Garnish as desired.
