I made this for friends last night, and they kept commenting how good it was! I used my "no roll" pie crust recipe for both the bottom crust and star shaped top.

Ingredients

  • PIE CRUST
  • 3 cups flour, divded
  • 4 teaspoons sugar, divided
  • 1 teaspoon salt, divided
  • 1 cup vegetable oil, divided
  • 4 tablespoons cold milk, divided
  • BLUEBERRY FILLING
  • 5 cups fresh blueberries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon cinnamon

How To Make fresh blueberry pie

  • Step 1
    For your pie crust: Sift half your flour, sugar, and salt into a 9-inch pie plate. In a 1-cup measuring cup, whisk together half your oil and milk and pour over flour mixture. Using a fork, mix until completely dampened. Press dough evenly over bottom of pie plate then up sides and over rim. This will be your bottom crust.
  • Step 2
    In a separate pan or plate, repeat these steps with the 2nd half of your crust ingredients. I used small star-shaped cookie cutters for decorative top. Cut several stars. Set aside.
  • Step 3
    For blueberry filling: In a large bowl, stir sugar, cornstarch, and cinnamon. Add blueberries; toss to coat.
  • Step 4
    Pour filling into your prepared crust. Top with star cut-outs.
  • Step 5
    Bake at 350 for 60 - 70 minutes. Enjoy!
