One slice is not enough! Its a darn good thing I have to share! The filling is so creamy and smooth and the cookie crust is just sweet enough. Yum!

Ingredients

  • 1 package keebler sandies shortbread cookies
  • 5 tablespoons butter, room temp
  • 3 tablespoons powdered sugar
  • 8 ounces cream cheese, room temperature
  • 1 cup cookie butter (see my recipe)
  • 1/4 cup powdered sugar
  • 1 1/2 cups whipped topping, thawed
  • pinch allspice, ground

How To Make fluffy cookie butter pie

  • Step 1
    CRUST: Crush one package of cookies in a food processor. Process until they are finely ground. Drop in 3 tablespoons butter and pulse until incorporated. Press crust mixture into a 9" pie pan. Place in freezer to set up while making the filling.
  • Step 2
    FILLING: In a large bowl, whip the cream cheese, cookie butter and remaining powdered sugar until light and fluffy - about four minutes. Fold in the whipped topping until just incorporated. Spread the filling into the chilled pie crust. Sprinkle the ground allspice and raw or vanilla sugar all over the top. Place back in the freezer to set up for at least 1 hour.

    Slice and serve. Enjoy!
