Easy Vanilla Cheese Pie
If you substitute sugar with Splenda(or your choice of sugar substitute)and use Nuefatchel Cream Cheese(or 1/3 less fat)you still get all the great taste....just fewer calories!

2 - 8oz. pkgcream cheese, room temperature
2 largeeggs, room temperature
1 Tbspvanilla extract
1 tsplemon juice(optional)
1ready made crust(i use keebler's shortbread crust)
·fruit topping of your choice(optional)
How to Make Easy Vanilla Cheese Pie
- Pre-heat oven to 300.
In medium mixing bowl, blend together the sugar and cream cheese to a smooth consistency. Add eggs one at a time. Blend until smooth. Add vanilla and lemon juice. Mix just 'til all are combined. Pour into the pie crust and place in oven on middle rack. Bake for 1 hour. Cool for 1 hr. at room temperature. Chill for 1 hr. Serve plain or top with your favorite fruit. Mmmm...so good!
