This is a great way to use up those fresh tomatoes from the garden.

Ingredients

  • 1 package refrigerated pie crust, such as pillsbury
  • 2 large fresh tomatoes, sliced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon freeze-dried chives
  • 1/2 teaspoon pepper
  • 1/2 cup light mayonnaise
  • 1 cup reduced-fat, shredded sharp cheddar cheese

How To Make easy summer tomato pie

  • Step 1
    Heat oven to 4550. Spray a 9" pie pan w/ cooking spray. Fit 1 pie crust into pan, and crimp edges.
  • Step 2
    Prick bottom and sides of pie crust w/ a fork and bake 9 mins. Reduce heat to 350. In bowl whisk together basil, chives and pepper. Arrange tomato slices in pie crust evenly. Sprinkle w/ herbs.
  • Step 3
    W/ a spoon, spread mayonnaise over tomatoes. Sprinkle w/ cheese. Bake, uncovered 20 mins or until cheese is melted and pie is hot.
