easy cheesecake pie

I can't remember where I got this recipe, only that it was many years ago. It's fast and easy to make and very popular as a dessert at a potluck or church supper.

Makes enough to fill 2 regular 8" pie crusts (NOT deep dish).
Ingredients
- 1 1/4 cups graham cracker crumbs
- 1/4 cup melted butter or margerine
- - filling:
- 1 package 8 ounce, cream cheese
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 1 dash salt
- - topping:
- 1 cup sour cream
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
How To Make easy cheesecake pie

Step 1Preheat oven to 350 degrees F. Combine crumbs and melted butter or margerine. Press into a buttered 8"-9" pie pan, building up around sides. -----OR----- Use a pre-made graham cracker crust.

Step 2Beat cream cheese until fluffy. Gradually blend in sugar, lemon juice, vanilla and salt.Add eggs one at a time beating well after each addition.

Step 3Pour filling into crust and bake for about 30 minutes or until set.

Step 4Combine the sour cream, sugar and vanilla and mix well. Spoon over top of pie and bake for 10 minutes longer. Cool and chill for several hours before serving.
