  • 2 large sweet potatoes
  • 3 tablespoons clarified butter (ghee), divided in half for topping
  • 1/2 cup maple syrup
  • 1 cup brown sugar, divided in half for topping
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon, divided in half for topping
  • 1 teaspoon nutmeg
  • 1/4 cup lactose free milk,your choice
  • 1/4 cup coconut flour
  • 1 cup pecans, chopped

How To Make crustless sweet potato pie

  • Step 1
    start by boiling the sweet potatoes until soft, cool & peel.
  • Step 2
    in a food processor or blender..mix the sweet potatoes, add in half the clarified butter, vanilla extract, maple syrup, half the cinnamon, nutmeg, eggs & milk...mix well
  • Step 3
    for topping, combine the coconut flour, cinnamon, brown sugar, butter & chopped pecans...in a pie dish add the sweet potato mixture & spread the topping evenly.
  • Step 4
    bake at 350 degrees for 45 mins, turn oven off and leave in for another 15 mins...take out, let cool & refrigerate
