Creamy Vanilla-Almond Custard

I love custards. they are so light and flavorful. This recipe is for those watching their cholesterol and fat. This recipe is for individual servings, but think it could possibly be made into a pie, with you having to calculate in calories and etc. for the type crust you use.

2 1/2 c
skim milk
1 c
egg substitute
1/3 c
sugar ( or splenda )
1 tsp
1/8 tsp
almond extract
vegetable cooking spray
2 Tbsp
roasted sliced almonds


1In large bowl mix first 5 ingredients until smooth
2Pour into 6 individual ( 6 oz ) custard cups, that havebeen sprayed with cooking spray
3Place cups in a baking pan, fill 1/2" with hot water
4carefully place in preheated 300 degree oven
5Bake 1 hour and 25 minutes, until knife inserted comes out clean
6Cool, and sprinkle with almond slices. cover with plastic and refrigerate
