Our store had limes on sale this week and just had to figure some way of making them sweet and luscious.

Ingredients
- 2 large 8 oz cream cheese, room temperature
- 3 - limes
- 2/3 cup sugar or splenda
- 2 - eggs
- 1 - graham cracker pie crust
- 1 dash green food coloring, opt
How To Make cool lime cheesecake

Step 1zest the limes and juice them.

Step 2with electric mixer, blend cream cheese with sugar in a large bowl until smooth

Step 3blend in lime zest, and juice

Step 4beat in eggs one at a time, blending well after each

Step 5add a drop of the food coloring

Step 6pour into crust and bake 30 minutes at 350 degrees.

Step 7cool, slice and serve with sweetened sour cream or cool whip.
