- zest the limes and juice them.
- with electric mixer, blend cream cheese with sugar in a large bowl until smooth
- blend in lime zest, and juice
- beat in eggs one at a time, blending well after each
- add a drop of the food coloring
- pour into crust and bake 30 minutes at 350 degrees.
- cool, slice and serve with sweetened sour cream or cool whip.
