coconut pie

This is a very good and easy coconut pie.I always get good comments on this pie.This recipe called for 1 can of coconut but it's more expensive than bagged coconut so I use 1 1/3 cups of coconut to equal 1 can of coconut.My aunt gave me this recipe many years ago,it's always been a favorite of ours!

Ingredients

  • 1 1/2 cups sugar
  • 2 teaspoons self rising flour
  • 3 - eggs,beaten well
  • 1 stick butter or margarine melted
  • 1/3 cup buttermilk
  • 1/2-TEASPOON VANILLA EXTRACT
  • 1 1/3 cups sweetened coconut
  • 1 - deep dish pie crust

How To Make coconut pie

  • Step 1
    Beat the above ingredients well,reserving the coconut
  • Step 2
    Grease bottom of uncooked pie shell with some of the margarine or butter I usually dip my fingers in the butter and spread it around the crust.
  • Step 3
    Sprinkle 1/2 coconut on bottom of buttered crust.
  • Step 4
    Pour mixture over coconut
  • Step 5
    Sprinkle remainder of coconut on top.
  • Step 6
    Bake in preheated oven at 350* until middle won't shake about 1 hr.
