coconut pie
This is a very good and easy coconut pie.I always get good comments on this pie.This recipe called for 1 can of coconut but it's more expensive than bagged coconut so I use 1 1/3 cups of coconut to equal 1 can of coconut.My aunt gave me this recipe many years ago,it's always been a favorite of ours!

Ingredients
- 1 1/2 cups sugar
- 2 teaspoons self rising flour
- 3 - eggs,beaten well
- 1 stick butter or margarine melted
- 1/3 cup buttermilk
- 1/2-TEASPOON VANILLA EXTRACT
- 1 1/3 cups sweetened coconut
- 1 - deep dish pie crust
How To Make coconut pie

Step 1Beat the above ingredients well,reserving the coconut

Step 2Grease bottom of uncooked pie shell with some of the margarine or butter I usually dip my fingers in the butter and spread it around the crust.

Step 3Sprinkle 1/2 coconut on bottom of buttered crust.

Step 4Pour mixture over coconut

Step 5Sprinkle remainder of coconut on top.

Step 6Bake in preheated oven at 350* until middle won't shake about 1 hr.
