This is a very good and easy coconut pie.I always get good comments on this pie.This recipe called for 1 can of coconut but it's more expensive than bagged coconut so I use 1 1/3 cups of coconut to equal 1 can of coconut.My aunt gave me this recipe many years ago,it's always been a favorite of ours!

  • 1 1/2 c
  • 2 tsp
    self rising flour
  • 3
    eggs,beaten well
  • 1 stick
    butter or margarine melted
  • 1/3 c

  • 1 1/3 c
    sweetened coconut
  • 1
    deep dish pie crust

How to Make Coconut Pie


  1. Beat the above ingredients well,reserving the coconut
  2. Grease bottom of uncooked pie shell with some of the margarine or butter I usually dip my fingers in the butter and spread it around the crust.
  3. Sprinkle 1/2 coconut on bottom of buttered crust.
  4. Pour mixture over coconut
  5. Sprinkle remainder of coconut on top.
  6. Bake in preheated oven at 350* until middle won't shake about 1 hr.
