1Process first 3 ingredients & 1/3 cup brown sugar in a food processor until crumbly.
Press mixture into bottom & up sides of a 10-inch deep-dish pie plate.Bake at 350 degrees for 5 minutes.Set pie-crust aside.
2Beat remaining 1 cup brown sugar,cream cheese,peanut butter & 1 tablespoon whipped topping at medium speed with an electric mixer until mixture is light and fluffy.Beat remaining whipped topping and coconut extract until stiff peaks form.
Fold one-third whipped topping into peanut butter mixture;fold peanut butter mixture into remaning whipped topping.
3Place granola bar pieces,chocolate chips & chopped peanut butter cups on the crust.Spread peanut butter mixture evenly over granola mixture.Drizzle with caramel ice cream topping,if desired,Chill for 2 hours.Serve with a glass of milk and enjoy.
