Meringue. Beat egg whites and cream of tartar to soft peaks, Gradually beat in the powdered sugar for about 4 minutes ,until stiff peaks form.
Spread immediately over hot pie, carefully sealing to outside edge of crust, so it does not shrink.Bake 15 minutes. Cool for 1 hour. Chill for 3 hours. To serve drizzle caramel sauce over top and sprinkle with chopped peacans or other nuts. Store covered in refrigerator, if any is left.
