buttermilk pie
This is a recipe my mom told me my Great-grandmother made during the depression and war. They had a cow, and churned and sold butter and milk. Also had two hens and a rooster...so they had eggs. So those items weren't rationed for them. They would save up the sugar and make this pie. She would make her own pie crust....I am bad and usually use a refrigerated pie crust. Recipe that is full of memories for me and my family. :)

Ingredients
- 1/4 cup butter, softened
- 1 1/4 cups sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 3 - eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 - unbaked 9" pastry shell
How To Make buttermilk pie

Step 1Cream butter; gradually add sugar cornstarch, and salt, beating well at medium speed of an electric mixer.

Step 2Add eggs, one at a time, beating well after each addition. Stir in buttermilk and vanilla.

Step 3Pour filling into the pastry shell. Place in a preheated 425 degree oven. Reduce heat to 350 degrees., and bake 50 minutes or until the pie is set.
