belgian sugar pies

This recipe makes 6 pies, so be ready to freeze some of them or share with family and friends. This was my grandma's recipe, who came to the USA in the late 1800's. She would fill her pie shell with various fruits, but my favorite was her brown sugar filling.

Ingredients

  • 3 cups flour
  • 6 - egg yolks (room temp)
  • 1/2 pound butter (not margarine)
  • 1 cup warm milk
  • 2 packages dry yeast
  • 1/4 cup brown sugar
  • 1 teaspoon salt

How To Make belgian sugar pies

  • Step 1
    Mix ingredients together. Don't knead.
  • Step 2
    Let rise.
  • Step 3
    When doubled, separate into 6 balls.
  • Step 4
    Place one ball in each of 6 pans.
  • Step 5
    Let rise again.
  • Step 6
    Shape in pie pans, using your hands.
  • Step 7
    Let set for a few minutes.
  • Step 8
    Fill and bake 325 degrees for 25 minutes.
  • Step 9
    (Keep an eye on them; if they start getting too brown, put foil around the edges.)
  • Step 10
    FILLING: Brown sugar. 2 beaten eggs. 1/2 c. milk.
  • Step 11
    Sprinkle brown sugar over pie bottom. Mix eggs and milk together and pour over sugar.
  • Step 12
    Dot with butter.
  • Step 13
    Bake 325 degrees for 25 minutes.
