This pie reminds me of childhood. We had an apricot tree in the backyard and, while it was messy with the dropped fruit all over the ground at times, the fresh apricots were delicious. This recipe calls for dried apricots, but you could also use fresh or canned. Photo: Mrfood.com

Ingredients
- 2 cups dried apricots
- 2 cups water
- 1/2 cup sugar
- 1 1/2 tablespoons cornstarch
- 1 pinch salt
- 3 tablespoons butter
- 1 - pastry for 2-crust pie
How To Make apricot pie

Step 1In a large saucepan, bring apricots and water to a boil. Cook for 10 minutes. Add sugar and cook another 5 minutes. Drain, reserving 1 cup of juice. Set aside.

Step 2Pour 1 cup reserved apricot juice into another saucepan and add cornstarch. Add salt and cook until mixture thickens, stirring frequently.

Step 3Arrange drained apricots in unbaked pie shell that has been placed in a 9-inch pie plate. Pour in thickened apricot juice. Dot with butter.

Step 4Cut top crust into lattice strips and arrange over pie. Flute the edges. Bake in a preheated 425-degree oven for 30 minutes.
