Here's another Spring pie by Grandma, Rhubarb was abundant at grandmas in the spring and pie was everyone's favorite. Happy Spring!

Ingredients

  • ·
    pastry for a 2 crust pie
  • 1 1/3 c
    sugar
  • 1/3 c
    flour
  • 1/2 tsp
    grated orange zest
  • 1/8 tsp
    salt
  • 4 c
    (1/2" pieces) rhubarb pink if you can get it
  • 2 Tbsp
    butter

How to Make Another Spring Pie By Grandma

Step-by-Step

  1. Combine sugar, flour orange zest, and salt. Add to pink rhubarb.
  2. Place in pastry lined pie pan dot with butter.
  3. Adjust top crust and flute edges, cut vents.
  4. Bake in 425 degrees oven for 40-50 minutes or until juice begins to bubble through vents and crust is golden brown. Partially cool before serving.
  5. Note if rhubarb is not pink add a few drops of red food coloring to filling. The amount of sugar depends on the tartness of the rhubarb from 1 1/3 cups to 2 cup depending on how tart you like it.
  6. This pie can also be made with a lattice top.
