Here's another Spring pie by Grandma, Rhubarb was abundant at grandmas in the spring and pie was everyone's favorite. Happy Spring!

Ingredients

  • - pastry for a 2 crust pie
  • 1 1/3 cups sugar
  • 1/3 cup flour
  • 1/2 teaspoon grated orange zest
  • 1/8 teaspoon salt
  • 4 cups (1/2" pieces) rhubarb pink if you can get it
  • 2 tablespoons butter

How To Make another spring pie by grandma

  • Step 1
    Combine sugar, flour orange zest, and salt. Add to pink rhubarb.
  • Step 2
    Place in pastry lined pie pan dot with butter.
  • Step 3
    Adjust top crust and flute edges, cut vents.
  • Step 4
    Bake in 425 degrees oven for 40-50 minutes or until juice begins to bubble through vents and crust is golden brown. Partially cool before serving.
  • Step 5
    Note if rhubarb is not pink add a few drops of red food coloring to filling. The amount of sugar depends on the tartness of the rhubarb from 1 1/3 cups to 2 cup depending on how tart you like it.
  • Step 6
    This pie can also be made with a lattice top.
