- Bake in 425 degrees oven for 40-50 minutes or until juice begins to bubble through vents and crust is golden brown. Partially cool before serving.
- Note if rhubarb is not pink add a few drops of red food coloring to filling. The amount of sugar depends on the tartness of the rhubarb from 1 1/3 cups to 2 cup depending on how tart you like it.
- This pie can also be made with a lattice top.
