Ingredients
- 2 3/4 cups all purpose flour(sifted) plus extra for dusting
- 1/3 cup powdered sugar
- 6 ounces butter at room temp
- 4 - egg yolks
How To Make all butter pastry

Step 1in medium sized mixing bowl place sugar and butter. Mix briefly with electric mixer.Add the egg yolks and a little of the flour and beat till smooth,now add remaining flour and mix to make a smooth dough.

Step 2Place in small plastic bag and chill for 15 minutes or more.Then take out and roll on a lightly floured surface and cut as desired. Make sure dough is chilled well or will stick.

Step 3Variations:for cinnamon flavor add 1teaspoon to the sugar For hazelnut flavor toast 1/4 cup hazelnuts and chop fine and add with the sugar. Lemon/orange flavor:Add grated rind of 1 orange or lemon and add with the sugar. Herb flavor:Omit sugar,add 2tablespoons fresh rosemary,parsley,or chives and salt and pepper. Mustard flavor:Omit sugar and add 1 1/2 teaspoons dry mustard powder and salt and pepper.
