whole wheat zucchini bread
For years I made the typical Zucchini Bread with cinnamon and my husband didn't like it at all. Then my friend gave me a recipe that didn't include any spice at all. I changed it up a bit by using whole wheat flour and dried fruit or chocolate chips. Now he loves it!

Ingredients
- 3 - eggs
- 1 cup veg. or canola oil
- 2 cups sugar
- 3 cups whole wheat flour
- 1 teaspoon baking soda
- 1 tablespoon salt
- 2 cups peeled and shredded zucchini
- 1 tablespoon vanilla extract
- 1 cup nuts of your choice or dried cherries, raisins, dried cranberries or chocolate chips. try any combination of your choice.
How To Make whole wheat zucchini bread

Step 1Preheat oven to 350 grease 2 9x5 Bread Pans

Step 2Beat eggs until foamy.

Step 3Add: oil and sugar and mix well

Step 4Add: 1 Cup of the flour, the salt and soda and stir in the zucchini.

Step 5Add: The remaining 2 cups of flour the vanilla and the nuts or fruit or chocolate chips. Mix well

Step 6Bake 50 to 60 minutes until a toothpick stuck in the middle comes out clean
