whole wheat zucchini bread

For years I made the typical Zucchini Bread with cinnamon and my husband didn't like it at all. Then my friend gave me a recipe that didn't include any spice at all. I changed it up a bit by using whole wheat flour and dried fruit or chocolate chips. Now he loves it!

Ingredients

  • 3 - eggs
  • 1 cup veg. or canola oil
  • 2 cups sugar
  • 3 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon salt
  • 2 cups peeled and shredded zucchini
  • 1 tablespoon vanilla extract
  • 1 cup nuts of your choice or dried cherries, raisins, dried cranberries or chocolate chips. try any combination of your choice.

How To Make whole wheat zucchini bread

  • Step 1
    Preheat oven to 350 grease 2 9x5 Bread Pans
  • Step 2
    Beat eggs until foamy.
  • Step 3
    Add: oil and sugar and mix well
  • Step 4
    Add: 1 Cup of the flour, the salt and soda and stir in the zucchini.
  • Step 5
    Add: The remaining 2 cups of flour the vanilla and the nuts or fruit or chocolate chips. Mix well
  • Step 6
    Bake 50 to 60 minutes until a toothpick stuck in the middle comes out clean
