A family "staple" at every gathering. My mother's famous (or infamous?) marshmallow peanut butter squares. None of us ever knew the true recipe name, hence the generic "pink slice". Forty-five years of family get-togethers and still going strong!

Blue Ribbon Recipe

Notes from the Test Kitchen:
Sweet... both in appearance and taste! Double the icing for even more special sweetness.


1/2 c
butter or margarine
1 pkg
butterscotch chips
1 c
finely grated coconut
1 c
peanut butter
1 pkg
multi-colored marshmallows
2 c
powdered sugar
1 tsp
butter or margarine
red food coloring drops
milk, enough to make good consistency of icing


1Melt and cool the 1/2 cup of butter and package of butterscotch chips.
2Add coconut, peanut butter and marshmallows. Mix well.
3Press into greased 9x9 pan.
4Mix powdered sugar and remaining butter. Add milk by teaspoons until desired consistency. Add red coloring to make a nice shade of pink. Spread over squares and chill. Freezes well.
