sweet eggs (kai wan)
This is a Thai dessert dish that I seen my daughter Ampair (Oradaporn Julaboonyasit) prepare a few years ago. This is basically hard cooked eggs in sugar water with a hint of ginger. Just 4 ingredients and 3 steps, and is a make as much as you like recipe as well.

Ingredients For sweet eggs (kai wan)

1/4 to 1 cbrown cane sugar

1 sliceginger, about a 1/2 inch piece

How To Make sweet eggs (kai wan)

1Add the sugar, 1/4 to 1 cup depending on how much sweetness you want, and ginger to a pot and add 3-4 inches of water, bring to a boil, once boiling, crack in eggs one at a time, Ampair used 10 eggs when she made this.

2Reduce heat and simmer the eggs until the yolk is cooked through, stirring occasionally.

3Serve with some of the liquid from the pot. This served 5 people as a dessert after a lunchtime meal. Enjoy.
