I just love the combination of strawberries and rhubarb together , brings back a lot of childhood memories when my mom would make this in the summer time. Yummy !

  • 4 1/2 c
  • 1 1/2 c
  • 1/2 c
  • 2 Tbsp
    quick cooking tapioca
  • 1 tsp
    grated orange peel

  • 2 Tbsp
  • 1 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
  • 1/4 c
  • 1/4 c
  • 1
    egg , lightly beaten

How to Make Strawberry & Rhubarb Cobbler


  1. Preheat oven to 350°
  2. Prep the rhubarb by trimming the ends , cut away the poisonous leaves , trim away the outside stringy layer then Cut the rhubarb stalks into 1" pieces.
  3. Stem and slice the strawberries.
  4. In a bowl combine the rhubarb and strawberries with the sugar , tapioca and orange zest , mix up tell all is coated. Set aside on your counter and let this mixture sit for 30 minutes to an hour.
  5. To make the crust , combine the sugar , flour baking powder and salt in a medium bowl.
  6. Using a fork or pastry blender , Cut the butter in till it resembles coarse crumbs.
  7. Stir in the milk and egg until just moistened.
  8. Pour the fruit mixture into a 2 quart baking dish.
  9. Drop the batter by tablespoons on top of the fruit.
  10. Bake for 35 minutes or until the crust is golden brown.
  11. Serve topped with whip cream.
