I just love the combination of strawberries and rhubarb together , brings back a lot of childhood memories when my mom would make this in the summer time. Yummy !

Ingredients

  • FRUIT MIXTURE :
  • 4 1/2 cups rhubarb
  • 1 1/2 cups strawberries
  • 1/2 cup sugar
  • 2 tablespoons quick cooking tapioca
  • 1 teaspoon grated orange peel
  • COBBLER CRUST :
  • 2 tablespoons sugar
  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 - egg , lightly beaten

How To Make strawberry & rhubarb cobbler

  • Step 1
    Preheat oven to 350°
  • Step 2
    Prep the rhubarb by trimming the ends , cut away the poisonous leaves , trim away the outside stringy layer then Cut the rhubarb stalks into 1" pieces.
  • Step 3
    Stem and slice the strawberries.
  • Step 4
    In a bowl combine the rhubarb and strawberries with the sugar , tapioca and orange zest , mix up tell all is coated. Set aside on your counter and let this mixture sit for 30 minutes to an hour.
  • Step 5
    To make the crust , combine the sugar , flour baking powder and salt in a medium bowl.
  • Step 6
    Using a fork or pastry blender , Cut the butter in till it resembles coarse crumbs.
  • Step 7
    Stir in the milk and egg until just moistened.
  • Step 8
    Pour the fruit mixture into a 2 quart baking dish.
  • Step 9
    Drop the batter by tablespoons on top of the fruit.
  • Step 10
    Bake for 35 minutes or until the crust is golden brown.
  • Step 11
    Serve topped with whip cream.
