strawberry & rhubarb cobbler
I just love the combination of strawberries and rhubarb together , brings back a lot of childhood memories when my mom would make this in the summer time. Yummy !

Ingredients
- FRUIT MIXTURE :
- 4 1/2 cups rhubarb
- 1 1/2 cups strawberries
- 1/2 cup sugar
- 2 tablespoons quick cooking tapioca
- 1 teaspoon grated orange peel
- COBBLER CRUST :
- 2 tablespoons sugar
- 1 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup butter
- 1/4 cup milk
- 1 - egg , lightly beaten
How To Make strawberry & rhubarb cobbler

Step 1Preheat oven to 350°

Step 2Prep the rhubarb by trimming the ends , cut away the poisonous leaves , trim away the outside stringy layer then Cut the rhubarb stalks into 1" pieces.

Step 3Stem and slice the strawberries.

Step 4In a bowl combine the rhubarb and strawberries with the sugar , tapioca and orange zest , mix up tell all is coated. Set aside on your counter and let this mixture sit for 30 minutes to an hour.

Step 5To make the crust , combine the sugar , flour baking powder and salt in a medium bowl.

Step 6Using a fork or pastry blender , Cut the butter in till it resembles coarse crumbs.

Step 7Stir in the milk and egg until just moistened.

Step 8Pour the fruit mixture into a 2 quart baking dish.

Step 9Drop the batter by tablespoons on top of the fruit.

Step 10Bake for 35 minutes or until the crust is golden brown.

Step 11Serve topped with whip cream.
