I just love shortbread. This is so easy and yummy. It's become a staple of my holiday baking.

Score the top before baking. This really helps to cut into squares without breaking.

butter, softened
1 1/2 c
powdered sugar
1 c
rice flour
3 1/2 c
flour, sifted three times

How to Make Scotch Shortbread


  • 1Cream butter and sugar. Add rice flour. Add flour gradually.
  • 2Press into 13X9 pan and score top. Bake at 300 degrees until golden brown - one hour or more.
