I just love shortbread. This is so easy and yummy. It's become a staple of my holiday baking. Score the top before baking. This really helps to cut into squares without breaking.

Ingredients
- 1 pound butter, softened
- 1 1/2 cups powdered sugar
- 1 cup rice flour
- 3 1/2 cups flour, sifted three times
How To Make scotch shortbread

Step 1Cream butter and sugar. Add rice flour. Add flour gradually.

Step 2Press into 13X9 pan and score top. Bake at 300 degrees until golden brown - one hour or more.
