Ingredients

  • FOR THE CRUST
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1 stick melted butter
  • 1/2 teaspoon pumpkin pie spice
  • FOR THE FILLING
  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla
  • 2 teaspoons pumpkin pie spice
  • FOR THE STREUSEL
  • 1 cup each brown sugar and flour
  • 1/2 cup rolled oats
  • 1 stick butter softened
  • 1 teaspoon pumpkin pie spice

How To Make pumpkin streusel bars

  • Step 1
    Preheat oven 350 degrees. Line a 9x13 pan with parchment paper.
  • Step 2
    To make the crust Combine all ingredients in a bowl. Mix well. Press into bottom of pan.
  • Step 3
    To make the filling Beat all ingredients together and spread over the crust.
  • Step 4
    To make the streusel Mix all the ingredients together will look like large crumbles. Sprinkle over top pumpkin layer.
  • Step 5
    Bake about 45 to 50 minutes. Toothpick will come out clean when inserted in middle. Let cool. Lift out with paper and cut into squares
