This is one of my favorite recipes. We decorate the icing with colored sugar depending on the holiday/event we are making these for.

2 c
1 c
vegetable oil
1 can(s)
15 oz pure pumpkin
2 c
all purpose flour
2 tsp
baking powder
2 tsp
1 tsp
baking soda
1/2 tsp
1/2 tsp
ground ginger
1/4 tsp
1 c
raisins (plus extra if desired)
colored sugars (if desired)


3 oz
cream cheese, softened
1/3 c
butter, softened
1 tsp
2 c
powdered sugar
1/2 c
walnuts, if desired

How to Make Pumpkin Spice Bars with Cream cheese Icing.


  • 1Pre-heat oven to 350°. Lightly grease bottom and sides of 15x10x1-inch pan with shortening. In a large bowl, beat eggs, granulated sugar, oil and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins. Spread in pan
  • 2Bake 25 to 30 minutes or until light brown. Cool completely in pan on cooling rack, about 2 hours.
    Do not skip cooling your icing will separate.
  • 3In medium bowl, beat cream cheese, butter and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Spread frosting over bars. Sprinkle with walnuts, sugars and extra raisins, if desired. Store in refrigerator.
