This is one of my favorite recipes. We decorate the icing with colored sugar depending on the holiday/event we are making these for.

  • 4 large
  • 2 c
  • 1 c
    vegetable oil
  • 1 can(s)
    15 oz pure pumpkin
  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 2 tsp
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
  • 1 c
    raisins (plus extra if desired)
  • ·
    colored sugars (if desired)

  • 3 oz
    cream cheese, softened
  • 1/3 c
    butter, softened
  • 1 tsp
  • 2 c
    powdered sugar
  • 1/2 c
    walnuts, if desired

How to Make Pumpkin Spice Bars with Cream cheese Icing.


  1. Pre-heat oven to 350°. Lightly grease bottom and sides of 15x10x1-inch pan with shortening. In a large bowl, beat eggs, granulated sugar, oil and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins. Spread in pan
  2. Bake 25 to 30 minutes or until light brown. Cool completely in pan on cooling rack, about 2 hours.
    Do not skip cooling your icing will separate.
  3. In medium bowl, beat cream cheese, butter and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Spread frosting over bars. Sprinkle with walnuts, sugars and extra raisins, if desired. Store in refrigerator.
