You can substitute peaches for the pineapple and mango jello for the pineapple jello. My husbands favorite cake is pineapple up side down and I decided to blend our favorites together.

Ingredients
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 can 20 oz. pineapple slices
- 1 jar maraschino cherries
- 1 package 9 oz. yellow cake mix
- 2 packages 8 oz. cream cheese
- 1 package 3 oz. pineapple jello
- 2 - eggs
How To Make pineapple upside down cheesecake

Step 1preheat oven to 350 degrees. spray 9 in. spring form pan with non stick cooking spray.Place pan on foil covered cookie sheet. stir melted butter and brown sugar together in cake pan and spread to cover bottom. Add pineapple slices(approx. 7) and place cherry in center of each ring.

Step 2Prepare cake mix as directed on package. pour 1/2 cake batter in pan covering pineapple.

Step 3Beat cream cheese, dry jello and eggs with electric mixer until smooth. Spread cream cheese mixture over cake batter. pour remaining cake batter over cream cheese mixture.

Step 4Bake for 55-65 minutes. I usually start checking mine at 45 min. Remove from oven and cool on rack for 5 min.then loosen sides and turn out onto a serving dish.I refridgerate mine after it is cool.
