The university I attended many years ago had a bakery (still does). I loved the mint brownies they made. A year or so ago, I found the recipe on a blog post of someone else who attended the university. I tried the recipe and was disappointed. The only thing I liked was the mint frosting. I decided to try to make my own using the mint frosting and a brownie recipe I love. This is the result. I make the mint frosting pink for Christmas and this time it is a light green for St. Patrick's Day. You can half the recipe and bake in an 11x7-inch or 8x8-inch pan. Just remember to half the frostings.

Ingredients For mint brownies

  • BROWNIES
  • 1 c
    unsalted butter
  • 14 oz
    semisweet chocolate, cut into chunks
  • 4 Tbsp
    cocoa powder
  • 2 1/2 c
    sugar
  • 2 tsp
    vanilla extract
  • 6
    large eggs
  • 2 c
    all-purpose flour
  • 1/2 tsp
    salt
  • 2 c
    walnuts, coarsely chopped
  • MINT FROSTING
  • 1/2 c
    butter, softened
  • dash
    salt
  • 1/4 c
    milk
  • 2 Tbsp
    corn syrup
  • 3 1/2 c
    powdered sugar
  • 1/2 tsp
    peppermint extract
  • 1 - 2
    drops food coloring
  • CHOCOLATE FROSTING
  • 1/4 c
    water
  • 1/4 c
    butter
  • 1/2 tsp
    vanilla extract
  • 1/2 c
    cocoa, sifted
  • 1 3/4 c
    powdered sugar, sifted
  • 1 1/2 Tbsp
    cream

How To Make mint brownies

    Preheat oven to 350 degrees F. Generously spray an 11x15-inch pan with non-stick cooking spray. I like to line my pans so I can just lift out to cut.
  • Melting chocolate and butter

    To make the cake, melt butter and chocolate over low heat in a heavy-bottomed 1-quart saucepan and stir until smooth. Add cocoa. Remove from heat, spoon into a large bowl and let cool to room temperature.
  • Adding sugar, eggs and vanilla

    Add sugar, vanilla, and eggs, stirring until smooth.
  • Adding flour

    Fold in flour, salt, and walnuts and stir to make a smooth batter.
  • Ready for the oven

    Pour batter into prepared pan. Bake 30 - 40 minutes or until brownies seem just set. It is tricky to test these. Cool completely before making the frostings.
  • Mint frosting

    To make the mint frosting, add the butter, salt, milk, corn syrup, and powdered sugar to a medium bowl. Beat until smooth and fluffy. Add the peppermint extract and coloring. Mix in additional milk if needed for a thinner consistency. Spread over brownies. Chill for a short time.

    To make the chocolate frosting, heat the water, butter, and vanilla until butter is melted. Remove from heat and stir in cocoa and powdered sugar. Stir in cream to desired consistency (you don't want it too thin). Carefully add on top of the mint frosting.

    Allow to set up before cutting. You can get 24 good sized brownies out of this, though you can get more if you cut them smaller, which I like to do since they are quite rich.

    There are a lot of ingredients and steps, but these are easy to make. The time listed doesn't count the cooling and chilling time.
