Ingredients

  • 1/2 c
    shortening
  • 1 c
    sugar
  • 2
    large eggs
  • 1 1/2 c
    all-purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    milk
  • 1
    grated rind of lemon
  • 1/2 c
    chopped pecans
  • LEMON GLAZE:

  • 1 c
    sifted powdered sugar
  • 3 Tbsp
    lemon juice

How to Make LEMON TEA BREAD

Step-by-Step

  1. Beat shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add eggs, one at a time; beating after each addition.
  2. Combine flour, baking powder, & salt; add to creamed mixture alternately with milk, beginning & ending with flour mixture. Stir in lemon rind & pecans.
  3. Pour batter into a greased & floured 9 x 5 x 3 inch loaf pan.
  4. Bake at 350 degrees for 50 to 55 minutes or until wooden pick inserted in center comes out clean.

    It may take a shorter time--depends on your oven.

    Cool on wire rack 10 to 15 minutes; remove from pan, & let cool completely on a wire rack.
  5. LEMON GLAZE:

    Combine both ingredients, stirring until smooth. Drizzle over cooled bread.
