All I can say is this is delicious! Made in a loaf pan....

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 - large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 - grated rind of lemon
  • 1/2 cup chopped pecans
  • LEMON GLAZE:
  • 1 cup sifted powdered sugar
  • 3 tablespoons lemon juice

How To Make lemon tea bread

  • Step 1
    Beat shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add eggs, one at a time; beating after each addition.
  • Step 2
    Combine flour, baking powder, & salt; add to creamed mixture alternately with milk, beginning & ending with flour mixture. Stir in lemon rind & pecans.
  • Step 3
    Pour batter into a greased & floured 9 x 5 x 3 inch loaf pan.
  • Step 4
    Bake at 350 degrees for 50 to 55 minutes or until wooden pick inserted in center comes out clean. It may take a shorter time--depends on your oven. Cool on wire rack 10 to 15 minutes; remove from pan, & let cool completely on a wire rack.
  • Step 5
    LEMON GLAZE: Combine both ingredients, stirring until smooth. Drizzle over cooled bread.
