Ingredients

  • 1/2 c
    confectioners' sugar
  • 2 c
    all-purpose flour
  • 1 c
    butter, softened
  • 4
    eggs
  • 1 1/2 c
    white sugar
  • 1/4 c
    flour
  • 1/2 c
    lemon juice
  • 1 Tbsp
    lemon zest, grated

How to Make LEMON PIE BARS

Step-by-Step

  1. Preheat oven to 350 degrees F.
  2. Mix confectioners' sugar and flour together. Cut in the butter. Mix well until the dough resembles pie dough consistency.
  3. Press the dough into a 9x13 inch baking pan. Bake 15-20 minutes or until golden brown.
  4. Beat together eggs, white sugar, 1/4 cup flour, lemon juice and lemon zest for at least 1 minute. Pour the mixture over the baked crust.
  5. Bake the bars another 20-25 minutes - or - until the lemon topping has set. When cooled, sprinkle with confectioners' sugar.
