This recipe uses coconut flour and cocoa powder to make a wonderful keto walnut brownie with a ganache. It's totally sugar-free and gluten-free, also. Tried and true, it's a keeper! (comes out to approx. 7 net carbs each brownie-1/9th of recipe)

Ingredients

  • BROWNIES
  • 1 stick salted butter, room temperature
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons water
  • 2/3 cup sugar substitute (I use Splenda)
  • 1 teaspoon baking powder
  • 1/3 cup cocoa powder, unsweetened
  • 3 tablespoons coconut flour
  • 1/2 cup chopped walnuts, plus a few additional for topping
  • CHOCOLATE GANACHE
  • 1/3 cup heavy cream
  • 1/2 cup sugar-free chocolate chips
  • 1/3 cup sugar substitute
  • reserved chopped walnuts for topping

How To Make keto glazed walnut brownies

  • Step 1
    Preheat oven to 350 degrees. Line a 9x9-inch baking pan with parchment (I crinkle a little with my hands before lining the pan to make it fit better).
  • Step 2
    In a medium bowl, whisk the butter, eggs, vanilla, and water until smooth.
  • Step 3
    Add baking powder, coconut powder, and coconut flour; stir to combine well. Stir in the walnuts, reserving a few for topping.
  • Step 4
    Bake 15 minutes, just until center sets. Don't overbake.
  • Step 5
    While brownies are cooking, microwave whipping cream on high in a microwave-safe bowl for 30 seconds.
  • Step 6
    Add chocolate chips and sweetener, stir, and let sit to melt. If you need to microwave a few more seconds, do it for 5-10 seconds at a time, stirring.
  • Step 7
    When smooth, top warm cooked brownies with ganache and sprinkle with reserved chopped pecans.
