What a great treat for that after school snack or that tasty nibble for those holiday drop in guests. Maybe making them for the church social or that holiday buffet, or house party.

Ingredients

  • CRUST;
  • 1/3 cup crisco
  • 1 cup granulated sugar
  • 2 medium eggs(reserve 1 egg white for meringue)
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon juice
  • COCONUT MERINGUE:
  • 1 cup brown sugar, firmly packed
  • 2/3 cup flaked coconut
  • 1/2 teaspoon vanilla
  • 1 medium egg white

How To Make ice and snow bars

  • Step 1
    Crust: Blend Crisco with sugar and eggs. Sift dry ingredients and add to the mixture alternately with the milk. Blend thoroughly, add flavoring. Spread 1/4-inch thick in greasedd cookie sheet. Cover with coconut meringue. --- Coconut Meringue: Beat the one(reserved) egg white until soft peaks form. Beat in sugar and add vanilla and coconut. Spread on top of cookie mixture. Bake 30 minutes in 325^ oven. Cut into squares.
