Makes 2 1/2 dozon
Ingredients
- 1 or 2 sticks unsalted butter preferably(or marg if you fell the need)
- 1 cup "demerara" (i like pure cane) sugar
- 2 - eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups almond meal/flour
- 3/4 cup organic golden flax meal
- 1 teaspoon baking soda
- 2 tablespoons cinnamon powder (or 1 t extract)
- 1/2 teaspoon salt (if desired)
- 3 cups old fashioned oats
- 1 cup raisins
- 1/2+/- cup sheaded or crushed almonds (if desired)

Step 1Cut eggs, sugar & vanilla into cold butter, until creamy. Add dry ingredents, continue cutting. I just use a fork because I don't have a mixer & it works great. Then add oats & raisins, mix well. Make into 2" patties, bake for 7 to 10 minutes in 350 F preheated oven. (About 8 minutes works for me at 7800 ft.)
