Ingredients For fireman bob's blueberry lemon ice cream

  • 1 pt
    blueberries
  • 1/2 c
    sugar separated into 2 - 1/4 cups each
  • 1 Tbsp
    corn starch
  • 1/2 can
    evaporated milk
  • 1/2 c
    egg substitute
  • 1 tsp
    grated lemon peel
  • 2 Tbsp
    lemon juice
  • 1/2 tsp
    vanilla

    Place Blueberries with 1/4 cup sugar in sauce pan and bring to medium heat till berries release their juice... Strain Mixture... Place berries in clean pan and add 1/4 cup sugar and the Corn Starch, whisk in 2/3 cup milk, bring to a gentle boil, cook till thick...

    Whisk in the egg substitute then the remaining milk... Stir in lemon peel and juice and vanilla... Refrigerate 20 minutes and then pour into Ice Cream Maker!
