I CAME UP WITH THIS RECIPE WHEN TRYING TO COME UP WITH A BANANA BREAD THAT I COULD MAKE THAT WAS DIABETIC FRIENDLY AND EASY YET TASTED GOOD. I THINK IT IS REALLY TASTY!

- 1 box 'pillsbury' -sugar free yellow cake mix (16 0z.)
- 1/3 cup canola oil
- 3 large eggs
- 3 TO 4 medium bananas, mashed (about 1 & 1/2 c.)
- 1/4 teaspoon nutmeg
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or pecans, finely chopped (optional)

Step 1PREP TIME: 10 MINUTES BAKE TIME: 45 TO 55 MINUTES MAKES: 2 (8X4-INCH) LOAVES OR 4 (MINI) LOAFS. PREHEAT OVEN TO 350 DEGREES F. GENEROUSLY SPRAY DESIRED SIZE LOAF PANS WITH ‘BAKER’S JOY' NONSTICK COOKING SPRAY.

Step 2IN A LARGE BOWL BEAT ALL INGREDIENTS UNTIL WELL MIXED. DIVIDE BADDER EVENLY BETWEEN PANS. BAKE 40-45 (MINI-PANS); 45-55 MINUTES (8X4-INCH) PANS, OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN AND INSIDE & CRACKS DON’T LOOK WET.
