I have made this recipe a few times using different rice cereals. This one is more like the traditional rice crispy squares but a healthier alternative.

It sets up very fast in the fridge and isn't overly sweet.

Ingredients

  • 1/2 c
    brown rice syrup
  • 1/2 c
    almond or other nut butter
  • 1 tsp
    pure vanilla extract
  • 1/2 c
    raisins or currants
  • 3 c
    rice crispy cereal

How to Make Crispy Rice Squares

Step-by-Step

  1. Place the rice syrup, nut butter, vanilla and raisins/currants in a small saucepan.
  2. Heat for a few minutes, then stir thoroughly.
  3. Pour the rice cereal in a big bowl and add the rice/nut/raisin syrup into the bowl. Mix all together very well.
  4. Press into a 9" square pan and allow to cool in the fridge. Cut into bars.
  5. You can also add an ounce of melted vegan chocolate to the nut butter for a different flavour.
  6. Enjoy!
