cranberry orange bread (with chopped walnuts)

From an old Betty Crocker Book, been using this recipe for 30 years. In the book it is listed under quick breads. I use a little bit more orange rind. you can omit the walnuts. I double the recipe and doubled makes 2 loafs. Enjoy

Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 - egg beaten
  • 1 teaspoon grated orange peal ( i use navel, & use more than calls for)
  • 3/4 cup orange juice, i use juice from the orange & add tropacana orange juice to make up the rest needed)
  • 2 tablespoons veggie. oil
  • 1 cup chopped cranberries (i use a little bit more, like a heaping cup)
  • 1/2 cup cup chopped walnuts (optional)

How To Make cranberry orange bread (with chopped walnuts)

  • Step 1
    350 oven, Grease loaf pan. ( I use Crisco) no need to flour the pan
  • Step 2
    In medium bowl Mix together flour, sugar, baking powder, baking soda and salt
  • Step 3
    In medium bowl Combine egg, grated orange peel,orange juice, and veggie oil.
  • Step 4
    Add step 3's ingredients to the dry ingredients, stirring just until moistened.
  • Step 5
    Fold in cranberries and walnuts.
  • Step 6
    Put batter in loaf pan 9x5x3 inch bake in 350 oven for about 60 minutes or until done. Remove from pan; cool. Wrap; store overnight. I double the batch and freeze 1 for the holidays
