I've made these several times now, and I can't stop eating them once I take them out of the oven.

I hope you give this recipe a try, they're really good.

Ingredients

  • CRUST BASE

  • 1/2 cup
    butter or margarine
  • 1/2 tsp
    salt
  • 1/2 cup
    brown sugar
  • 1 cup
    flour
  • COCONUT TOPPING

  • 2 large
    eggs
  • 1 cup
    brown sugar
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    baking powder
  • 2 Tbsp
    flour
  • 1 1/2 cups
    shredded sweetened coconut
  • 1 cups
    nuts, coarsely chopped

How to Make Coconut Bars

Step-by-Step

  1. Preheat oven to 325°F. Lightly butter an 8x12-inch baking dish; set aside.
  2. Mix together the butter, salt, brown sugar and flour until well blended. Press into the prepared baking dish in an even layer. Bake in preheated oven for 15 minutes. Remove from oven; set aside.
  3. Beat eggs well. Add all remaining ingredients and beat until all ingredients are well mixed. Spread over the baked crust. Bake at 325° for 25 minutes. Let cool, then cut into bars.
