I've made these several times now, and I can't stop eating them once I take them out of the oven. I hope you give this recipe a try, they're really good.

Ingredients

  • CRUST BASE
  • 1/2 cup - butter or margarine
  • 1/2 teaspoon salt
  • 1/2 cup - brown sugar
  • 1 cup - flour
  • COCONUT TOPPING
  • 2 large eggs
  • 1 cup - brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 2 tablespoons flour
  • 1 1/2 cups - shredded sweetened coconut
  • 1 cups - nuts, coarsely chopped

How To Make coconut bars

  • Step 1
    Preheat oven to 325°F. Lightly butter an 8x12-inch baking dish; set aside.
  • Step 2
    Mix together the butter, salt, brown sugar and flour until well blended. Press into the prepared baking dish in an even layer. Bake in preheated oven for 15 minutes. Remove from oven; set aside.
  • Step 3
    Beat eggs well. Add all remaining ingredients and beat until all ingredients are well mixed. Spread over the baked crust. Bake at 325° for 25 minutes. Let cool, then cut into bars.
