How to Make Carrot, lemon, orange, caramel muffins
- Preheat oven per directions on the Carrot Cake Box
You can make 24 regular muffins or 12 jumbo. Either grease well or use muffin liners (I use liners).
- Make the cake per directions substituting the oil for apple sauce. Stir in lemon and orange peel (I use fresh) and using an ice cream scoop or spoon, fill muffin tins 3/4 full.
- Test for doneness using a toothpick. When done, Immediately poke holes in all the muffins (I use wooden spoon handle). Heat caramel topping in microwave for appx. 20-30 seconds. Spoon caramel over muffins and let cool. When cool, lift out and store in airtight container. Enjoy!
- For healthier muffins, you can use egg substitute and sugar free caramel topping.
