canadian butter tarts
Butter tarts are a Canadian tradition. They are rich, sweet and gooey. This recipe includes raisins but some include walnuts or neither. Making pastry is an art form I have not mastered so this recipe uses store bought frozen shells. Sometimes the tarts can run over when cooking so don't fill them too full. You might want to cook 24 tarts in 2 batches. Enjoy!

Ingredients
- 24 tart shells
- 1/2 cup corn syrup
- 1/2 cup melted butter
- 1 cup brown sugar
- 2 eggs ( lightly beaten )
- 1 teaspoon lemon juice
- 1 teaspoon vanilla
- 3/4 cup raisins
How To Make canadian butter tarts

Step 1Preheat oven to 375°

Step 2Put tart shells on a rimmed cookie sheet and place some raisins(6-8) in each shell.

Step 3Mix the rest of the ingredients together. Fill each tart shell half way (a generous tablespoon)with mixture.

Step 4Bake 15 minutes. Watch that they don't overflow or burn.
