Sometimes out of mistakes, come great things...this is one of them. I say this is a loaf, but it's more of a square really. I started out making lemon squares, and made a few mistakes. Turns out, the result is one that my kids love!

Ingredients
- 1 cup flour
- 1/2 cup butter
- 1/4 cup powdered sugar
- 2 tablespoons lemon juice, or, 1 tbs water, 1 tbs lemon flavoring
How To Make breakfast lemon loaf

Step 1Preheat oven at 350 degrees F. Mix flour, butter, powdered sugar, and lemon juice with an electric mixer until it resembles a creamy, almost liquid batter.

Step 2Pour the batter into a 8 x 6, 2 inch deep, glass baking dish. Bake for 25-30 minutes.

Step 3Let cool completely, turn out onto a cutting board or wax paper, and cut into squares. This makes a great breakfast kind of cake. It's a bit dense, but has a lovely, light lemon flavor to it.
