This is a Irish tea bread and it is very good. I have also ADDED a little Bushmills Irish Whiskey to this when soaking raisins and peel mixture overnight. (small amount to the tea) so the tea still measures 1 cup. maybe 1 tsp to 1 tablespoon.

Ingredients

  • 3/4 cup raisins
  • 3/4 cup golden raisins
  • - grated peel of 1 lemon
  • 1/2 cup dark brown sugar
  • 1 cup cold tea (i use twinnings irish breakfast)
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 - egg
  • YOU WILL NEED A WELL GREASED 8 1/2 BY 4 1/2 INCH LOAF PAN

How To Make barm brack (irish tea loaf)

  • Step 1
    Soak raisins, peel,and sugar in the cold tea overnight in the refrigerator. Pre-heat oven to 325 degrees. Sift flour and mix with soda and salt. blend in egg and the tea-raisin mixture. pour into well greased loaf pan as directed above. bake 1 hour or until firm to touch. allow to cool 10 minutes,and turn out onto wire rack to cool completely.
