banana nut bread
I always save my bananas, freeze them until ready to make this bread. They will be black outside usually, but perfect inside. You may substitute more bananas and use less oil if you prefer. For best results, after baking the bread, let it cool and then wrap in saran wrap first, then foil and place in the freezer. Keeps for very long time. I find that after freezing and letting it defrost in frig, the flavor is very intensified. That is the secret with banana nut bread. Enjoy!
