I'm always on the lookout for healthy after school snacks for the kids. Ran across this recipe awhile back and it fit the bill! With no refined flours-just oats, it's chock full of fruit and whole grain yumminess! Can easily be made gluten-free by using gluten-free oats.

Ingredients

Add to Grocery List

6 Tbsp
butter(i often use coconut oil), room temp.
1/4 c
brown sugar(i use honey or maple syrup)
1
egg
3
bananas, mashed
1/4 tsp
salt
2 c
oats
1/2 c
raisins
1/4 c
unsweetened coconut, optional
1/4 c
mini chocolate chips, optional

How to Make Banana Oat Bars

Step-by-Step

  • 1Pregeat oven to 350F. Grease an 8x8in baking pan.
  • 2Cream butter and sugar. Beat in egg. Add mashed banana and salt and stir. Stir in oatmeal, raisins and any optional ingredients.
  • 3Spread in pan and bake 30-40 min. until light golden brown. Cool in pan and cut into squares.
