banana oat bars
I'm always on the lookout for healthy after school snacks for the kids. Ran across this recipe awhile back and it fit the bill! With no refined flours-just oats, it's chock full of fruit and whole grain yumminess! Can easily be made gluten-free by using gluten-free oats.

Ingredients
- 6 tablespoons butter(i often use coconut oil), room temp.
- 1/4 cup brown sugar(i use honey or maple syrup)
- 1 - egg
- 3 - bananas, mashed
- 1/4 teaspoon salt
- 2 cups oats
- 1/2 cup raisins
- 1/4 cup unsweetened coconut, optional
- 1/4 cup mini chocolate chips, optional
How To Make banana oat bars

Step 1Pregeat oven to 350F. Grease an 8x8in baking pan.

Step 2Cream butter and sugar. Beat in egg. Add mashed banana and salt and stir. Stir in oatmeal, raisins and any optional ingredients.

Step 3Spread in pan and bake 30-40 min. until light golden brown. Cool in pan and cut into squares.
