baked apple cider doughnuts - a fall treat!

I love apple cider doughnuts, but I'm not able to get them where I live. We have to travel to the western part of our state into the NC mountains to get them. I decided that I'm going to learn to make my own and this recipe didn't disappoint.

Ingredients

  • 1 1/2 cups apple cider, reduced to 1/3 cup
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 pinch ground mace
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup sugar
  • 1/3 cup brown sugar, lightly packed
  • 3 tablespoons butter, melted
  • 1/2 cup whole buttermilk
  • 1 1/2 teaspoons vanilla extract
  • TOPPING
  • 6 tablespoons melted butter
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg

How To Make baked apple cider doughnuts - a fall treat!

  • Step 1
    Pour apple cider into a saucepan and bring to a boil. Reduce heat and simmer for 15-25 minutes until reduced to 1/3 cup. Remove from heat and cool.
  • Step 2
    Preheat oven to 350 degrees. Butter a doughnut baking sheet and set aside.
  • Step 3
    In a large bowl, sift together flour, baking powder, baking soda, spices and salt.
  • Step 4
    In smaller bowl, whisk together the egg and the sugars until well combined. Add the melted butter and whisk. Add the reduced apple cider, buttermilk and vanilla. Whisk together until well combined.
  • Step 5
    Add to flour mixture and mix well with a spatula. Do not use a mixer! You won't want to overmix. Mix until combined and smooth.
  • Step 6
    Using a piping bag or corner cut out of a plastic bag, pipe the batter into the prepared doughnut pan. Place in oven and bake for 8 to 10 minutes or until a toothpick inserted in the center comes out clean.
  • Step 7
    Remove from oven and cool in pan for about 5 minutes. Carefully remove doughnut from pan. Dip in melted butter and roll in sugar mixture. Enjoy!
