This is another great recipe that I found on one of my favorite websites called Heavenly Homemakers. I love how it includes whole grains & healthy fats.

Ingredients

  • 1 cup butter, melted
  • 3/4 cup honey
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup milk or buttermilk
  • 2 large eggs
  • 2 cups whole wheat flour (i used freshly ground)
  • 1 1/2 cups oats
  • 1/2 cup shredded coconut
  • 1/4 cup sesame seeds
  • 3/4 cup dried apricots, cut into small pieces

How To Make apricot bars

  • Step 1
    Combine the honey & butter in a bowl.
  • Step 2
    Add baking soda, salt, vanilla, milk & eggs.
  • Step 3
    Stir in flour, oats, coconut & sesame seeds.
  • Step 4
    Fold in apricot pieces.
  • Step 5
    Spread into a greased 13x9 baking pan & bake at 350' for about 25 minutes.
  • Step 6
    Cool & cut into bars.
