I found this recipe on the Internet and thought it was perfect for Thanksgiving! I tried it and loved it! And what's great about this snack is that its healthy too! This is a no-bake recipe!

Ingredients

  • 1 c
    kellogg's all-bran cereal
  • 1/3 c
    plain pumpkin puree
  • 1/3 c
    honey
  • 2/3 c
    sweetened shredded coconut
  • 1/2 tsp
    pure vanilla extract
  • 1 1/3 c
    instant oatmeal
  • 1/2 tsp
    cinnamon powder
  • 1/2 c
    chocolate chips
  • 1/4 c
    sesame seeds - toasted

How to Make Acorn Bites

Step-by-Step

  1. In a medium size bowl, stir together the first 7 ingredients.
  2. Then chill the dough while your melting the chocolate.
  3. Line a cookie sheet with waxed paper.
  4. Remove chilled dough from fridge and form into about 20-24 one inch oblong shaped balls.
  5. Dip one end of the shaped dough into the melted chocolate then dip into the toasted sesame seeds. Place a piece of the All-Bran cereal into the top to form a stem. Do this for all the dough balls. Then chill until ready to serve.
